Kari kari ume are a traditional snack made from unripe plums. Unlike umeboshi, which are soft and juicy, the kari kari ume are hard and crunchy, making a "kari kari" (Japanese onomatopoeia) sound when you're eating it. They are therefore less intense and salty than regular umeboshi.
Beside being a snack, the give a Japanese twist to Martini or to a desert or pastry.
