"Umenori" is a "seaweed tsukudani" made with precious plums from Dazaifu and nori from the Ariake Sea. The plums used are only harvested in limited locations, such as the ruins of the Dazaifu Government Office. In addition, only the first and second grade Ariake nori, which have the best flavor and melt-in-your-mouth texture, are used. First the sourness of the plum hits your nose, and then the rich flavor of the Ariake nori spreads throughout your mouth.
Umenori works very well as topping on rice or fish dishes.
