Origin & Production
Yubeshi is a traditional Japanese delicacy, especially known in regions where fragrant yuzu thrives. Exclusive: It is made only by a few families in Japan and only during certain periods. For this variety, a whole yuzu is carefully hollowed out and its peel is filled with a sweet–savory mixture of miso, sugar, and nuts. The filled fruit is then slowly steamed and dried for several weeks, allowing the aroma of the yuzu to infuse deeply into the filling. This artisanal process results in a concentrated, richly flavored treat that has been crafted in virtually the same way for centuries — a product of precision, time, and traditional craftsmanship.
Flavour Profile
Yubeshi offers an intense, layered flavour in which sweetness, savouriness, and citrus come together harmoniously. The yuzu peel provides a deep, aromatic freshness with subtle bitter notes, while the miso filling adds warm umami and hints of caramel. The nuts contribute a gentle crunch and soft nutty undertone. The result is a rich, concentrated delicacy that is refreshing, warm, and elegant all at once. Some people even pick up a licorice-like flavour and sensation. The texture is semi-soft and slightly sticky. Perfect with cheese or as a flavourful snack alongside a good drink. This one is truly for the real connoisseurs.
Usage
Slice the yubeshi into thin pieces or small cubes to fully appreciate its depth of flavour. Serve it as a refined snack with tea, as a unique addition to desserts, or as a standout element on a cheese or charcuterie board. Yubeshi pairs beautifully with soft cheeses, nuts, and complements sake, port, or sweet wines exceptionally well. It can also be used in savoury dishes — finely chopped into salads, over rice dishes, or as a flavour accent for grilled vegetables. Thanks to its strong, complex taste, only a small amount is needed for a powerful aromatic effect.
Storage
Store yubeshi in a cool, dry place away from direct sunlight. After opening, keep it in an airtight container to prevent drying. Consume within a few weeks of opening. Refrigeration is not necessary.
