Yuzu

Yuzu is a citrus fruit. Originally from China, it has been widely cultivated in Japan over the past decades. Like oranges and mandarins, it grows on a tree. The fruit starts out green and ripens to a yellow-orange color in autumn.

In many ways, yuzu closely resembles sudachi, another Japanese citrus fruit that is a cross between yuzu and mandarin. Unlike sudachi, yuzu eventually ripens to a yellow-orange color, and there are subtle differences in flavor.

Yuzu is mainly cultivated in Japan, but for several decades now it has also been grown in the United States and increasingly in Spain. Still, fresh yuzu remains scarce and has a short shelf life. Our harvest season for ripe, fresh yuzu runs—depending on weather conditions—from November through January, making it very short.
